I see no connection between this reaction and the decomposition of thatch, and the manufacturer provides no explanation in their marketing material. ![]() If you search for this term, it identifies a family of enzymes called Carbonic anhydrases, which “assists rapid inter-conversion of carbon dioxide and water into carbonic acid, protons and bicarbonate ions”. One product also contains something they call a carbonic enzymes, without specifying which ones.
